Description

These Almond Croissant Cinnamon Rolls combine buttery, flaky croissant dough with almond paste and cinnamon sugar filling, topped with a sweet icing, offering the perfect blend of textures and flavors.


Ingredients

1 sheet puff pastry or croissant dough

1/2 cup almond paste

1/4 cup brown sugar, packed

1 tablespoon ground cinnamon

1/4 cup melted butter

1/4 cup sliced almonds

1 egg (for egg wash)

1/4 cup powdered sugar (for icing)

1 tablespoon milk or cream


Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Roll out the croissant or puff pastry dough onto a lightly floured surface.
  3. In a small bowl, mix together the almond paste, brown sugar, and cinnamon until well combined.
  4. Spread the almond mixture evenly over the dough, leaving a small border around the edges.
  5. Brush the dough with melted butter and then carefully roll it up into a log shape, sealing the edges as you go.
  6. Slice the roll into 8-10 even pieces and place them on the prepared baking sheet.
  7. In a small bowl, whisk the egg and brush it over the tops of the cinnamon rolls to create a golden finish.
  8. Sprinkle sliced almonds over the top of the rolls.
  9. Bake for 20-25 minutes or until golden brown and puffed.
  10. While the rolls bake, whisk together powdered sugar and milk to make a smooth icing.
  11. As soon as the rolls come out of the oven, drizzle the icing over them while they’re still warm.

Notes

For a nut-free version, swap the almond paste and sliced almonds with sunflower seed paste and sunflower seeds.

For a fruit twist, add dried fruits such as raisins or cranberries to the filling.

For a vegan version, use plant-based butter, almond milk for the icing, and skip the egg wash.

If storing leftovers, place in an airtight container at room temperature for up to 2 days.

These rolls can be made ahead and refrigerated overnight before baking.

Unbaked rolls can be frozen for later use, bake directly from the freezer.
