Ingredients

4 cups all-purpose flour

1/4 cup granulated sugar

1 teaspoon baking soda

1 teaspoon salt

4 tablespoons unsalted butter, cold and cubed

1 3/4 cups buttermilk

1 large egg

1/2 cup raisins or currants (optional)


Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, sugar, baking soda, and salt.
  3. Add the cold butter cubes and use a pastry cutter or your fingers to work it into the flour until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together the buttermilk and egg.
  5. Gradually add the wet ingredients to the dry ingredients, stirring just until a shaggy dough forms. If using, fold in the raisins or currants.
  6. Turn the dough onto a lightly floured surface and gently knead it a few times to bring it together—do not overwork it.
  7. Shape the dough into a round loaf and place it on the prepared baking sheet.

Notes

For a crunchier crust, place a small pan of water in the oven while baking to create steam.

Substitute whole wheat flour for part or all of the all-purpose flour for a heartier texture.
