Description

A soft, moist traditional German apple cake featuring tender vanilla-scented cake topped with thinly sliced apples and a cinnamon-sugar topping. Perfect for afternoon tea, gatherings, or a cozy dessert.

Ingredients

1 1/2 cups all-purpose flour

2 teaspoons baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/3 cup milk

2 medium apples, peeled, cored, and thinly sliced

1 tablespoon lemon juice

1/4 cup brown sugar

1 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round or square baking dish.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then add the vanilla extract.
  5. Gradually mix in the dry ingredients, alternating with the milk, until just combined.
  6. Spread the batter evenly into the prepared baking dish.
  7. Toss the apple slices with lemon juice and arrange them on top of the batter.
  8. In a small bowl, mix together the brown sugar and cinnamon, then sprinkle over the apples.
  9. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
  10. Let cool for 10 minutes before slicing and serving warm or at room temperature.

Notes

Swap apples with pears for a fruity variation.

Add chopped walnuts or pecans for extra crunch.

Top with whipped cream or vanilla ice cream for a richer dessert.

Stir in raisins or dried cranberries with the apples for a rustic twist.

Store at room temperature for up to 2 days or refrigerate for up to 4 days.
