Ingredients
3 cups peeled and finely chopped apples
2 cups granulated sugar
1 cup vegetable oil
3 large eggs
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 teaspoon vanilla extract
1 cup chopped pecans
For the Caramel Glaze:
1/2 cup unsalted butter
1/2 cup brown sugar, packed
1/4 cup milk
1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9x13-inch baking dish.
- In a large bowl, mix the sugar, oil, and eggs until well combined.
- Add the flour, baking soda, cinnamon, and salt to the wet ingredients, stirring until just combined.
- Fold in the chopped apples, vanilla extract, and pecans.
- Pour the batter into the prepared baking dish and spread evenly.
- Bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake is baking, prepare the caramel glaze. In a small saucepan, combine the butter, brown sugar, and milk. Bring to a boil over medium heat and cook for 2 minutes, stirring constantly. Remove from heat and stir in the vanilla extract.
- When the cake is done, immediately pour the warm glaze over the hot cake.
- Allow the cake to cool slightly before slicing and serving.
Notes
Storage: Store in an airtight container at room temperature for up to 3 days. For longer storage, refrigerate for up to a week.
Reheating: Warm individual slices in the microwave for 10-15 seconds or in the oven at 300°F (150°C) for about 10 minutes to maintain the cake’s moisture.
If you want to make the cake healthier, swap some of the oil for unsweetened applesauce and reduce the amount of sugar, but the caramel glaze will still add sweetness.
You can freeze the cake without the glaze. Wrap it tightly and store in the freezer for up to 3 months. Thaw overnight before serving with the glaze.
