Description

This Baked Cod with Lemon and Herbs recipe is an easy, light, and flavorful dish that brings together tender cod fillets with the refreshing taste of lemon and aromatic herbs. Ingredients

4 cod fillets (6 oz each)

2 tablespoons olive oil

1 tablespoon fresh lemon juice

2 teaspoons lemon zest

1 teaspoon garlic, minced

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

Fresh parsley for garnish (optional)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Line a baking dish with parchment paper or lightly grease it with cooking spray.
  3. Place the cod fillets in the prepared baking dish.
  4. In a small bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, dried thyme, dried rosemary, salt, and pepper.

Notes

To add veggies, slice zucchini or bell peppers and place them around the cod fillets before baking.
