Description

A light and flavorful dish with fresh zucchini, spinach, and creamy feta cheese, baked to perfection. It's a versatile and easy-to-make meal or side dish.


Ingredients

2 medium zucchinis, sliced

2 cups fresh spinach, chopped

1/2 cup feta cheese, crumbled

1 tablespoon olive oil

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and pepper to taste

1 tablespoon fresh parsley, chopped (optional)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchinis into rounds and arrange them on a baking sheet.
  3. Drizzle the olive oil over the zucchini slices and sprinkle with garlic powder, onion powder, salt, and pepper.
  4. Toss the zucchini slices to coat evenly in the seasoning.
  5. Top the zucchini slices with the chopped spinach and crumbled feta cheese.
  6. Bake in the preheated oven for 15-20 minutes, or until the zucchini is tender and the cheese is golden brown.
  7. Remove from the oven and sprinkle with fresh parsley before serving, if desired.

Notes

You can add red pepper flakes for extra heat or sun-dried tomatoes for sweetness.

Swap feta for goat cheese or add roasted nuts for extra texture.
