Description

Banana fritters are a delightful twist on the classic fritter—golden-brown, crisp on the outside, and melt-in-your-mouth soft banana inside. Perfect as a breakfast treat or a sweet snack, these fritters are simple to make and loved by everyone.


Ingredients

3 ripe bananas, mashed

1 cup all-purpose flour

2 tablespoons sugar

1 teaspoon baking powder

1/4 teaspoon salt

1/2 teaspoon ground cinnamon

1/4 teaspoon nutmeg (optional)

1 large egg, lightly beaten

1/4 cup milk (dairy or non-dairy)

1 teaspoon vanilla extract

Vegetable oil for frying


Instructions

  1. In a medium bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg.
  2. In another bowl, combine the mashed bananas, beaten egg, milk, and vanilla until smooth.
  3. Gradually stir the dry ingredients into the banana mixture until a thick batter forms. If the batter feels too thick, add a splash more milk.
  4. Heat about 1/2 inch of vegetable oil in a deep skillet over medium heat until warm (around 350°F/175°C).
  5. Using a spoon or small ice cream scoop, drop heaping tablespoonfuls of batter into the hot oil, spacing them a few inches apart.
  6. Fry the fritters for 2–3 minutes per side or until golden brown and cooked through.
  7. Transfer the fritters to a paper towel-lined plate to drain any excess oil.
  8. Serve warm with a dusting of powdered sugar or a drizzle of honey or maple syrup.

Notes

Store leftovers in an airtight container at room temperature for up to 1-2 days.

To reheat, place the fritters in a preheated oven at 350°F (175°C) for about 5 minutes to restore their crispiness.

Can substitute egg with a flax egg (1 tbsp ground flaxseed mixed with 3 tbsp water) or another mashed banana for a vegan option.

If the batter is too thick, adjust with more milk.

Frozen bananas can be used, but make sure to thaw and drain excess moisture before mashing.
