Ingredients

1/4 cup (50g) firmly packed light brown sugar

6 tablespoons (85g) unsalted butter, melted

16 oz. cream cheese, brought to room temperature

14 oz. sweetened condensed milk

1/2 cup (113g) sour cream, at room temperature

1/2 teaspoon vanilla extract

1 cup (227g) mashed bananas


Instructions

  1. Preheat and Prepare: Preheat oven to 300°F (150°C). Line an 8-inch square baking dish with parchment paper, leaving an overhang for easy removal later.

  2. Make the Crust: In a bowl, combine graham cracker crumbs, brown sugar, and melted butter. Press evenly into the bottom of the prepared dish. Refrigerate while preparing the filling.

  3. Prepare the Filling: Beat the cream cheese in a large bowl until smooth. Add sweetened condensed milk, sour cream, and vanilla extract, mixing until well combined. Stir in the mashed bananas, leaving some lumps for texture.

  4. Bake the Cheesecake: Pour the filling over the chilled crust, spreading it evenly. Bake for 40 minutes, or until the filling is firm and lightly golden on top.

  5. Cool and Chill: Allow the cheesecake to cool completely. Refrigerate for at least 4 hours to set.
