1/2 cup fresh blueberries

1/2 teaspoon lemon zest

2 tablespoons purple food coloring (optional)

1 tablespoon coarse sugar for sprinkling


Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a separate large bowl, beat softened butter and granulated sugar until light and fluffy.
  4. Add the egg and vanilla extract to the butter-sugar mixture, mixing until smooth.
  5. Gradually stir in the dry ingredients until just combined, being careful not to overmix.
  6. Gently fold in fresh blueberries and lemon zest. If desired, add purple food coloring.
  7. Scoop dough into 1-inch balls and place them on the baking sheet. Slightly flatten each dough ball and sprinkle with coarse sugar.
  8. Bake for 12-15 minutes, until the edges are golden brown. Let cool for 5 minutes before transferring to a wire rack to cool completely.

Notes
