Description

These Blueberry Oatmeal Breakfast Bars are soft, chewy, and naturally sweetened, making them a perfect grab-and-go breakfast or snack. Made with wholesome oats, whole wheat flour, and juicy blueberries, they are a nutritious and delicious option for busy mornings.


Ingredients

2 cups rolled oats

1 cup whole wheat flour

1/2 cup honey or maple syrup

1 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon salt

1 cup unsweetened applesauce

1/2 cup milk (dairy or non-dairy)

1 egg

1 teaspoon vanilla extract

1 1/2 cups fresh or frozen blueberries


Instructions

  1. Preheat oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper.
  2. In a large bowl, mix oats, flour, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together applesauce, milk, egg, vanilla, and honey (or maple syrup).
  4. Pour wet ingredients into dry ingredients and stir until just combined.
  5. Gently fold in the blueberries.
  6. Spread batter evenly in the prepared dish.
  7. Bake for 30-35 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
  8. Let the bars cool completely before cutting into squares.

Notes

Swap applesauce with mashed banana for a different flavor.

Add chopped nuts, dark chocolate chips, or shredded coconut for extra texture.

Store at room temperature (2 days), in the fridge (1 week), or freeze (3 months).
