Ingredients
2 cups rolled oats
1 cup whole wheat flour
1/2 cup honey or maple syrup
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 cup unsweetened applesauce
1/2 cup milk (dairy or non-dairy)
1 egg
1 teaspoon vanilla extract
1 1/2 cups fresh or frozen blueberries
Instructions
- Preheat oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper.
 - In a large bowl, mix oats, flour, baking powder, cinnamon, and salt.
 - In another bowl, whisk together applesauce, milk, egg, vanilla, and honey (or maple syrup).
 - Pour wet ingredients into dry ingredients and stir until just combined.
 - Gently fold in the blueberries.
 - Spread batter evenly in the prepared dish.
 - Bake for 30-35 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
 - Let the bars cool completely before cutting into squares.
 
Notes
Swap applesauce with mashed banana for a different flavor.
Add chopped nuts, dark chocolate chips, or shredded coconut for extra texture.
Store at room temperature (2 days), in the fridge (1 week), or freeze (3 months).
