Description

This brown butter mushroom pasta is a rich and flavorful dish that combines the earthy taste of sautéed mushrooms with the nutty richness of brown butter. The result is a creamy, savory pasta that's perfect for any occasion.


Ingredients

8 oz pasta (spaghetti, fettuccine, or your choice)

1 tablespoon butter

2 tablespoons olive oil

1 pound mushrooms, sliced (cremini or button mushrooms work well)

3 cloves garlic, minced

1/4 cup dry white wine (optional)

1/2 cup heavy cream

1/4 cup grated Parmesan cheese (or dairy-free alternative)

Salt and pepper to taste

Fresh parsley, chopped, for garnish


Instructions

  1. Cook the pasta according to the package directions. Reserve 1/2 cup of pasta water and drain the rest.
  2. In a large skillet, heat the butter over medium heat. Allow the butter to melt and bubble, then continue cooking until it turns golden brown and releases a nutty aroma, about 5-7 minutes. Be careful not to burn it.
  3. Add the olive oil and sliced mushrooms to the skillet, and sauté for 5-7 minutes, until the mushrooms are browned and tender.
  4. Stir in the garlic and cook for an additional 1-2 minutes, until fragrant.
  5. If using, pour in the white wine and let it simmer for 2-3 minutes to reduce slightly.
  6. Add the heavy cream to the skillet and stir well to combine. Simmer for another 3-4 minutes until the sauce thickens.
  7. Stir in the grated Parmesan and season with salt and pepper to taste.
  8. Add the cooked pasta to the skillet, tossing it to coat in the sauce. If the sauce seems too thick, add reserved pasta water a little at a time until you reach the desired consistency.
  9. Serve the pasta garnished with fresh parsley and an extra sprinkle of Parmesan, if desired.

Notes

For a vegan version, use a dairy-free alternative for the Parmesan cheese and opt for a plant-based cream instead of heavy cream.

If you’re craving more protein, you can add grilled chicken or crispy bacon.

For a bit of spice, red pepper flakes can be added to the sauce for an extra kick.

If you prefer a lighter option, consider using zucchini noodles or whole wheat pasta instead of regular pasta.
