Ingredients
1 cup orzo pasta
1 tablespoon olive oil
1 bunch asparagus, trimmed and cut into 1-inch pieces
2 tablespoons unsalted butter
2 cloves garlic, minced
1/2 cup Parmesan cheese, grated
Salt and pepper to taste
1 tablespoon fresh lemon juice (optional)
Fresh parsley, chopped (for garnish)
Instructions
- Cook the orzo pasta according to the package instructions. Drain and set aside.
- While the orzo is cooking, heat the olive oil in a large skillet over medium heat. Add the asparagus pieces and cook for 3-4 minutes, until tender but still crisp.
- Add the minced garlic to the skillet and sauté for an additional 1-2 minutes, until fragrant.
- Reduce the heat to low and add the butter, letting it melt and coat the asparagus and garlic.
- Stir in the cooked orzo and Parmesan cheese, mixing until well combined and creamy.
- Season with salt and pepper to taste, and stir in the lemon juice if you’d like a bit of brightness.
- Garnish with fresh parsley before serving.
Notes
This dish is best enjoyed fresh, but leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
When reheating, add a splash of water or broth to loosen the sauce and reheat gently over low heat.
If you’re vegan, you can substitute plant-based butter and vegan cheese for a dairy-free version.
