Description

Butter Asparagus Orzo is a rich and creamy dish that combines tender asparagus, perfectly cooked orzo, and a luscious butter sauce. It’s perfect for a weeknight dinner or a flavorful side to any meal.


Ingredients

1 cup orzo pasta

1 tablespoon olive oil

1 bunch asparagus, trimmed and cut into 1-inch pieces

2 tablespoons unsalted butter

2 cloves garlic, minced

1/2 cup Parmesan cheese, grated

Salt and pepper to taste

1 tablespoon fresh lemon juice (optional)

Fresh parsley, chopped (for garnish)


Instructions

  1. Cook the orzo pasta according to the package instructions. Drain and set aside.
  2. While the orzo is cooking, heat the olive oil in a large skillet over medium heat. Add the asparagus pieces and cook for 3-4 minutes, until tender but still crisp.
  3. Add the minced garlic to the skillet and sauté for an additional 1-2 minutes, until fragrant.
  4. Reduce the heat to low and add the butter, letting it melt and coat the asparagus and garlic.
  5. Stir in the cooked orzo and Parmesan cheese, mixing until well combined and creamy.
  6. Season with salt and pepper to taste, and stir in the lemon juice if you’d like a bit of brightness.
  7. Garnish with fresh parsley before serving.

Notes

This dish is best enjoyed fresh, but leftovers can be stored in an airtight container in the refrigerator for up to 3 days.

When reheating, add a splash of water or broth to loosen the sauce and reheat gently over low heat.

If you’re vegan, you can substitute plant-based butter and vegan cheese for a dairy-free version.
