Description

These Caramel Cheesecake Cookies are the perfect dessert for those craving a combination of soft, chewy cookies with a rich, creamy cheesecake filling and a burst of caramel sweetness. These cookies are easy to make and deliver a melt-in-your-mouth experience with optional mini chocolate chips for extra flavor. A must-try treat for caramel and cheesecake lovers alike!

Ingredients

1 1/2 cups all-purpose flour

1/2 tsp baking soda

1/4 tsp salt

1/2 cup unsalted butter, softened

1/2 cup cream cheese, softened

1 cup granulated sugar

1 large egg

1 tsp vanilla extract

1/2 cup caramel sauce

1/2 cup mini chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.

  3. In a large bowl, beat together the softened butter, cream cheese, and sugar until smooth and creamy.

  4. Add the egg and vanilla extract to the mixture, beating until fully incorporated.

  5. Gradually add the dry ingredients into the wet mixture, stirring gently until just combined.

  6. Fold in the caramel sauce and mini chocolate chips (if using).

  7. Scoop tablespoon-sized portions of dough and place them on the prepared baking sheet, spaced about 2 inches apart.

  8. Bake for 10-12 minutes, or until the edges are golden and the cookies have set.

  9. Let the cookies cool for a few minutes on the baking sheet before transferring them to a wire rack to cool completely.

Notes

For added flavor, try replacing mini chocolate chips with caramel chips or toffee bits.

Drizzle extra caramel sauce over the cooled cookies for a sweeter finish.

These cookies freeze well for up to 2 months.
