Ingredients
1 1/2 cups all-purpose flour
1/2 cup powdered sugar
1/2 cup unsalted butter, softened
1/2 cup unsweetened shredded coconut
1/2 cup sweetened condensed milk
1/4 cup brown sugar, packed
1/4 cup unsalted butter, melted
1 teaspoon vanilla extract
Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper or lightly grease it.
- In a medium bowl, combine the flour, powdered sugar, and softened butter. Use a pastry cutter or your fingers to mix until the mixture forms a crumbly dough.
- Press the dough evenly into the bottom of the prepared pan to form the crust and bake for 12-15 minutes or until lightly golden brown.
- While the crust is baking, prepare the caramel layer. In a medium saucepan, combine the sweetened condensed milk, brown sugar, melted butter, and vanilla extract. Stir it over medium heat until it starts to bubble.
- Reduce the heat and cook for 5 minutes, stirring frequently, until the mixture thickens.
- Remove from heat and stir in the shredded coconut.
- Once the crust is baked, spread the caramel-coconut mixture evenly over the crust.
- Return the pan to the oven and bake for an additional 15-20 minutes or until the coconut topping turns golden brown and bubbly.
- Allow the bars to cool completely in the pan before slicing into squares.
