Ingredients
1/2 cup peanut butter (natural or regular)
1/4 cup applesauce or yogurt
1 tsp pure vanilla extract
1/2 cup cocoa powder
1/4 tsp salt
1/4 tsp baking soda
1/3 cup pure maple syrup or honey
1/4 cup oat flour (or almond flour)
1/3 cup mini chocolate chips (optional)
6 oz cream cheese, softened
3 tbsp plain Greek yogurt or sour cream
3 tbsp maple syrup or sugar
1/2 tsp vanilla extract
1 tsp cornstarch
Instructions
- Preheat oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
- In a mixing bowl, combine peanut butter, applesauce, vanilla extract, cocoa powder, salt, baking soda, maple syrup, and oat flour. Stir until smooth. Fold in chocolate chips if using.
- In a separate bowl, beat together cream cheese, Greek yogurt, maple syrup, vanilla, and cornstarch until smooth.
- Spread 3/4 of the brownie batter evenly into the prepared pan.
- Spoon the cheesecake mixture over the brownie base. Dollop remaining brownie batter on top.
- Use a knife or skewer to swirl the batters together for a marbled effect.
- Bake for 25–28 minutes, or until center is just set and a toothpick inserted comes out mostly clean.
- Let cool completely, then refrigerate for at least 2 hours before slicing for clean layers.
