Description

Cheesesteak Tortellini in Rich Provolone Sauce combines the flavors of Philly cheesesteak with cheesy tortellini in a creamy provolone sauce, creating a hearty and indulgent dish.

Ingredients

1 lb cheese tortellini

1 tablespoon olive oil

1 lb beef steak (such as flank steak), thinly sliced

1 onion, thinly sliced

1 bell pepper, thinly sliced

2 cloves garlic, minced

1/2 cup beef broth

1 cup heavy cream

1 1/2 cups provolone cheese, shredded

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the cheese tortellini according to the package instructions. Drain and set aside.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the thinly sliced steak and cook for 3-4 minutes, or until browned and cooked through. Remove the steak from the skillet and set aside.
  3. In the same skillet, add the sliced onion, bell pepper, and garlic. Sauté for 3-4 minutes until the vegetables are softened.
  4. Add the beef broth to the skillet and bring to a simmer, scraping up any browned bits from the bottom of the pan.
  5. Stir in the heavy cream and bring the mixture to a gentle boil. Reduce heat and cook for 2-3 minutes until the sauce thickens slightly.
  6. Gradually stir in the shredded provolone cheese, continuing to cook until the cheese melts and the sauce becomes smooth.
  7. Return the cooked steak to the skillet and stir to combine with the sauce.
  8. Add the cooked tortellini to the skillet and toss gently to coat in the creamy cheese sauce.
  9. Season with salt and pepper to taste.
  10. Serve the cheesesteak tortellini in bowls, garnished with freshly chopped parsley.

Notes

Vegetarian Option: Replace the beef steak with portobello mushrooms or a plant-based protein like tempeh or tofu.

Spicy Kick: Add a pinch of crushed red pepper flakes or a sliced jalapeño when cooking the vegetables.

Cheese Swap: Substitute provolone with mozzarella, cheddar, or a mix of cheeses for a different flavor.

Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat with a splash of milk or cream.
