Ingredients
1 lb chicken breast, diced
1 tablespoon olive oil
1 small onion, chopped
2 cloves garlic, minced
2 cups broccoli florets
1 cup orzo pasta
4 cups chicken broth
1/2 cup heavy cream
1 1/2 cups shredded cheddar cheese
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the diced chicken and cook for 6-8 minutes, or until golden brown and fully cooked through. Remove the chicken and set it aside.
- In the same skillet, add the chopped onion and garlic. Sauté for 2-3 minutes, until the onion becomes translucent.
- Add the broccoli florets to the skillet and cook for 3-4 minutes, or until they start to soften.
- Stir in the orzo pasta and chicken broth, bringing the mixture to a simmer. Cover and cook for 8-10 minutes, or until the orzo is tender and most of the liquid has been absorbed.
- Lower the heat and stir in the heavy cream, shredded cheddar cheese, and grated Parmesan cheese. Continue to stir until the cheese is melted and the sauce is creamy.
- Add the cooked chicken back into the skillet, season with salt and pepper, and stir to combine.
- Serve hot, garnished with extra cheese or fresh herbs if desired.
