Description

Cheesy Chicken Broccoli Orzo is a creamy and comforting dish that brings together tender chicken, vibrant broccoli, and fluffy orzo pasta, all enveloped in a rich, melty cheese sauce. It’s perfect for a cozy weeknight meal or a satisfying dinner when I’m craving something indulgent yet balanced.


Ingredients

1 lb chicken breast, diced

1 tablespoon olive oil

1 small onion, chopped

2 cloves garlic, minced

2 cups broccoli florets

1 cup orzo pasta

4 cups chicken broth

1/2 cup heavy cream

1 1/2 cups shredded cheddar cheese

1/2 cup grated Parmesan cheese

Salt and pepper to taste


Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced chicken and cook for 6-8 minutes, or until golden brown and fully cooked through. Remove the chicken and set it aside.
  2. In the same skillet, add the chopped onion and garlic. Sauté for 2-3 minutes, until the onion becomes translucent.
  3. Add the broccoli florets to the skillet and cook for 3-4 minutes, or until they start to soften.
  4. Stir in the orzo pasta and chicken broth, bringing the mixture to a simmer. Cover and cook for 8-10 minutes, or until the orzo is tender and most of the liquid has been absorbed.
  5. Lower the heat and stir in the heavy cream, shredded cheddar cheese, and grated Parmesan cheese. Continue to stir until the cheese is melted and the sauce is creamy.
  6. Add the cooked chicken back into the skillet, season with salt and pepper, and stir to combine.
  7. Serve hot, garnished with extra cheese or fresh herbs if desired.

Notes

Swap out the chicken: Replace the chicken with shrimp or ground turkey for a different flavor.

Make it a veggie dish: Omit the chicken and add extra broccoli, mushrooms, spinach, or peas.

Spice it up: Add a pinch of red pepper flakes or a diced jalapeño for a spicier kick.
