Ingredients

4 boneless, skinless chicken breasts

1 cup mushrooms, finely chopped

½ cup cream cheese, softened

½ cup shredded mozzarella cheese

3 tablespoons butter

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried parsley

Salt and pepper, to taste

¼ cup grated Parmesan cheese

Fresh parsley, for garnish


Instructions

  1. Preheat oven to 375°F (190°C).

  2. In a skillet, melt butter over medium heat. Sauté minced garlic until fragrant (about 1 minute).

  3. Add mushrooms, thyme, parsley, salt, and pepper. Cook 5–7 minutes until browned and liquid has evaporated.

  4. In a bowl, mix the mushroom mixture with cream cheese and mozzarella until smooth.

  5. Slice a pocket into each chicken breast and stuff with filling.

  6. Place stuffed breasts in a greased baking dish and top with Parmesan cheese.

  7. Bake 25–30 minutes until chicken is cooked through and juices run clear.
