Description

Cheesy Garlic Zucchini Steaks are a delicious and healthy side dish featuring roasted zucchini topped with garlic butter and melted cheese. Perfect for a low-carb meal or side, these zucchini steaks are full of flavor and sure to please.


Ingredients

4 medium zucchinis

2 tablespoons olive oil

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon salt

1/4 teaspoon black pepper

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

2 tablespoons butter, melted

2 cloves garlic, minced

Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the zucchinis into 1/2-inch thick rounds.
  3. Lay the zucchini slices in a single layer on a baking sheet lined with parchment paper.
  4. Drizzle the olive oil over the zucchini slices and sprinkle with garlic powder, onion powder, salt, and black pepper.
  5. Roast the zucchini in the preheated oven for 20-25 minutes, or until the zucchini is tender and slightly golden.
  6. While the zucchini is roasting, prepare the garlic butter: In a small bowl, combine the melted butter and minced garlic.
  7. After removing the zucchini from the oven, brush the garlic butter mixture over the roasted zucchini slices.
  8. Sprinkle the mozzarella and Parmesan cheeses on top of each zucchini slice.
  9. Return the zucchini to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  10. Garnish with chopped parsley before serving.

Notes

For extra flavor, add red pepper flakes to the garlic butter for a spicy kick.

Try swapping mozzarella and Parmesan with other cheeses like cheddar or gouda for different flavor profiles.

If you like extra crunch, top with breadcrumbs before adding the cheese.
