Description

This cheesy ground beef rice casserole is a warm and comforting dish that brings together savory ground beef, tender rice, and plenty of melted cheese. It’s an easy-to-make family dinner that is sure to satisfy everyone's hunger and cravings!


Ingredients

1 lb ground beef

1 small onion, diced

2 cloves garlic, minced

1 cup long-grain white rice

2 cups beef broth

1 can (14.5 oz) diced tomatoes, drained

1 cup shredded cheddar cheese

1/2 cup sour cream

1 teaspoon paprika

1 teaspoon dried oregano

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (optional, for garnish)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and garlic and sauté for about 3-4 minutes until softened.
  3. Add the ground beef to the skillet and cook until browned, breaking it apart as it cooks. Drain any excess fat.
  4. Stir in the rice, beef broth, diced tomatoes, paprika, oregano, salt, and pepper. Bring the mixture to a boil, then reduce heat to low and simmer for 15 minutes or until the rice is almost cooked through.
  5. Remove the skillet from the heat and stir in the sour cream and half of the shredded cheddar cheese until well combined.
  6. Transfer the mixture to a greased 9x13-inch casserole dish and sprinkle the remaining cheddar cheese evenly on top.
  7. Bake in the preheated oven for 15-20 minutes or until the cheese is melted and bubbly.
  8. Let the casserole cool for a few minutes before serving. Garnish with fresh parsley, if desired.

Notes

You can use brown rice, but it will take longer to cook. You may need to adjust the cooking time and liquid accordingly.

The casserole can be made ahead of time and refrigerated for up to 24 hours before baking.

For a spicier version, try adding chili flakes, jalapeños, or a can of green chilies to the beef mixture.

This casserole freezes well and can be stored for up to 2-3 months in an airtight container.
