Ingredients
1 cup unsalted butter, softened
1/2 cup cream cheese, softened
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour

1/2 teaspoon salt
1/2 cup maraschino cherries, chopped
1/4 cup maraschino cherry juice
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the butter, cream cheese, and sugar until light and fluffy.
- Beat in the egg and vanilla extract until smooth.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until fully combined.
- Gently fold in the chopped maraschino cherries and cherry juice.
- Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
For a Cherry-Almond Variation, add 1/2 teaspoon of almond extract to the dough.
For White Chocolate Cherry Cookies, fold in white chocolate chips with the cherries.
If you prefer a more intense cherry flavor, use dried cherries instead of maraschino cherries.
You can drizzle a simple cherry glaze (made from powdered sugar and cherry juice) over the cooled cookies for extra sweetness.
