Ingredients
4 boneless, skinless chicken breasts
4 slices of ham or prosciutto
4 slices of Swiss cheese
1 cup all-purpose flour
2 large eggs, beaten
1 cup breadcrumbs (preferably panko)
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon paprika
Salt and pepper to taste
2 tablespoons butter, melted
1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F (190°C).
 - Place chicken breasts between two sheets of plastic wrap and gently pound them to about 1/2 inch thickness using a meat mallet.
 - Lay a slice of meat and a slice of Swiss cheese on each chicken breast, then roll them up tightly and secure with toothpicks.
 - In three separate shallow dishes, place the flour, beaten eggs, and breadcrumbs mixed with garlic powder, onion powder, paprika, salt, and pepper.
 - Dredge each chicken roll in the flour, dip it in the beaten eggs, and then coat it with the seasoned breadcrumbs.
 - Heat the olive oil and melted butter in a large skillet over medium heat.
 - Brown the chicken rolls in the skillet, turning them to ensure they are evenly browned on all sides (about 4-5 minutes).
 - Transfer the browned chicken rolls to a baking dish and bake in the preheated oven for 20-25 minutes, or until the chicken is fully cooked (internal temperature should reach 165°F).
 - Remove the toothpicks before serving.
