Description

Ingredients

2 cups cooked, shredded chicken

1 bell pepper (red, yellow, or green), sliced

1 small onion, sliced

1 cup cooked rice (or 1 cup pasta, cooked)

1 cup shredded cheddar or Mexican blend cheese

½ cup sour cream

½ cup cream cheese, softened

½ cup salsa

1 tbsp fajita seasoning

1 tsp garlic powder

1 tsp smoked paprika

¼ tsp cayenne pepper (optional, for extra spice)


Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, sauté the bell peppers and onions until soft and caramelized.
  3. In a large bowl, combine shredded chicken, cooked rice (or pasta), sour cream, cream cheese, salsa, fajita seasoning, garlic powder, smoked paprika, and cayenne pepper. Mix well.
  4. Gently fold in the sautéed bell peppers and onions.
  5. Transfer the mixture to a greased casserole dish and spread evenly.
  6. Sprinkle the shredded cheese over the top.
  7. Bake for 20-25 minutes or until the cheese is bubbly and golden brown.
