Ingredients
2 tablespoons olive oil
1 pound chicken breast, diced
1 onion, diced
2 cloves garlic, minced
1 packet taco seasoning
1 can (15 oz) diced tomatoes
1 can (4 oz) diced green chilies
1 cup frozen corn kernels
1 cup black beans, drained and rinsed
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1/2 cup sour cream
1/2 cup salsa
8 corn tortillas, cut into strips
Salt and pepper to taste
Instructions

Preheat the oven to 375°F (190°C).

Heat olive oil over medium heat in a large skillet. Add diced chicken and cook until browned and cooked through, about 6-8 minutes. Remove the chicken and set it aside.

In the same skillet, sauté the diced onion and minced garlic for 2-3 minutes until softened.

Add taco seasoning, diced tomatoes, green chilies, corn, and black beans to the skillet. Stir and cook for 3-4 minutes.

In a greased 9x13-inch baking dish, layer half of the tortilla strips, followed by half of the chicken mixture, then half of the shredded cheeses. Repeat the layers, ending with cheese on top.
