Description

This Chicken Taco Casserole combines all the bold flavors of tacos into one easy-to-make dish. Ingredients

2 tablespoons olive oil

1 pound chicken breast, diced

1 onion, diced

2 cloves garlic, minced

1 packet taco seasoning

1 can (15 oz) diced tomatoes

1 can (4 oz) diced green chilies

1 cup frozen corn kernels

1 cup black beans, drained and rinsed

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup sour cream

1/2 cup salsa

8 corn tortillas, cut into strips

Salt and pepper to taste


Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Heat olive oil over medium heat in a large skillet. Add diced chicken and cook until browned and cooked through, about 6-8 minutes. Remove the chicken and set it aside.

  3. In the same skillet, sauté the diced onion and minced garlic for 2-3 minutes until softened.

  4. Add taco seasoning, diced tomatoes, green chilies, corn, and black beans to the skillet. Stir and cook for 3-4 minutes.

  5. Stir in cooked chicken, sour cream, and salsa. Season with salt and pepper to taste.

  6. In a greased 9x13-inch baking dish, layer half of the tortilla strips, followed by half of the chicken mixture, then half of the shredded cheeses. Repeat the layers, ending with cheese on top.

  7. Bake in the preheated oven for 20-25 minutes, or until bubbly and the cheese is melted and golden.

  8. Let the casserole cool for a few minutes before serving.

Vegetarian Option: Replace chicken with extra beans or vegetables like zucchini, bell peppers, or mushrooms.
