Description

This Chicken with Garlic Parmesan Rice is the perfect combination of tender chicken, creamy rice, and bold flavors. A one-pan dish that's easy to make and satisfying, ideal for a weeknight dinner.


Ingredients

2 boneless, skinless chicken breasts (cut into bite-sized pieces)

1 cup long-grain rice (uncooked)

2 cups chicken broth

3 cloves garlic (minced)

½ cup grated Parmesan cheese

½ teaspoon black pepper

½ teaspoon paprika

2 tablespoons butter

1 tablespoon olive oil

½ cup heavy cream (optional, for creamier rice)

2 tablespoons chopped parsley (for garnish)


Instructions

  1. Heat olive oil in a skillet over medium heat. Season the chicken with paprika and black pepper. Cook for 5-7 minutes, until golden brown. Remove the chicken from the skillet and set aside.
  2. In the same skillet, melt the butter and sauté the minced garlic until fragrant (about 30 seconds). Add the rice and stir for 1-2 minutes until the rice is lightly toasted.
  3. Pour in the chicken broth and bring it to a simmer. Cover and cook on low for 15-18 minutes, or until the rice is tender.
  4. Stir in the Parmesan cheese and heavy cream (if using). Add the cooked chicken back into the skillet and mix everything together.
  5. Garnish with chopped parsley and extra Parmesan for a beautiful, flavorful touch.

Notes

For extra flavor, you can add vegetables like mushrooms, spinach, or peas.

Add a pinch of red pepper flakes to make it spicy.

You can substitute the chicken with shrimp, pork, or tofu for a different twist.

For a creamier texture, add more heavy cream or some cream cheese.
