Ingredients
2 boneless, skinless chicken breasts
1 tablespoon olive oil
1 tablespoon lime juice
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon garlic powder
Salt and pepper to taste
1/2 cup chipotle ranch dressing
4 large flour tortillas
1 cup cooked rice
1 cup shredded lettuce
1/2 cup diced tomatoes
1/4 cup sliced red onion
1/4 cup shredded cheddar cheese
1/4 cup fresh cilantro, chopped
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, combine olive oil, lime juice, chili powder, cumin, garlic powder, salt, and pepper. Rub the spice mixture over the chicken breasts.
- Grill the chicken for 5-6 minutes per side or until the internal temperature reaches 165°F (75°C).
- While grilling, warm the tortillas in a skillet over medium heat for 30 seconds per side.
- Slice the grilled chicken into thin strips.
- To assemble, spread a few tablespoons of chipotle ranch dressing on each tortilla.
- Layer with rice, shredded lettuce, diced tomatoes, sliced red onion, shredded cheese, cilantro, and grilled chicken.
- Fold in the sides of the tortilla and roll up tightly to enclose the fillings.
- Serve the burrito with extra chipotle ranch dressing on the side, if desired.
Notes
