Ingredients

2 cups quick cooking oats

2 ripe bananas

2 eggs

1 cup milk (unsweetened almond milk or cow’s milk)

¼ cup honey

1½ tablespoons vanilla extract

2 teaspoons baking powder

1½ teaspoons cinnamon

½ cup chocolate chips

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a blender, combine the oats, bananas, eggs, milk, honey, vanilla extract, baking powder, and cinnamon. Blend until smooth, ensuring the oats are finely ground.
  3. Gently fold in the chocolate chips.
  4. Lightly grease a 12-cup muffin pan or line with paper liners. Distribute the batter evenly, filling each cup about two-thirds full.
  5. For extra indulgence, sprinkle additional chocolate chips on top of each muffin.
  6. Bake for 15 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the muffins to cool in the pan for 5-10 minutes before transferring to a wire rack to cool completely.

Notes

To make these muffins dairy-free, use almond milk and ensure the chocolate chips are dairy-free.

If you prefer a sugar-free version, substitute honey with a low-calorie sweetener like stevia or monk fruit.

For extra texture, add chopped nuts or dried fruit to the batter.

These muffins are freezer-friendly and can be stored in an airtight container for up to 2 months.
