Description

These Chocolate Raspberry Crumb Bars are a perfect combination of buttery, crumbly layers, rich chocolate, and the sweet burst of raspberry jam. Each bite is a deliciously indulgent treat, making them the perfect dessert for any occasion.


Ingredients

1 1/2 cups all-purpose flour

3/4 cup rolled oats

1/2 cup brown sugar

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, cold and cubed

1 teaspoon vanilla extract

1/4 cup raspberry jam

1/2 cup semi-sweet chocolate chips


Instructions

  1. Preheat oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
  2. In a large mixing bowl, combine flour, oats, brown sugar, baking powder, and salt.
  3. Add cold cubed butter and vanilla extract to the dry ingredients. Use a pastry cutter or hands to blend everything until crumbly.
  4. Press about two-thirds of the crumb mixture into the prepared pan to form the bottom layer.
  5. Spread raspberry jam evenly over the crumb base.
  6. Sprinkle semi-sweet chocolate chips on top of the raspberry layer.
  7. Top with the remaining crumb mixture, pressing lightly into the chocolate and raspberry layers.
  8. Bake for 30-35 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.
  9. Let the bars cool completely before cutting them into squares.

Notes

Fruit Jam: Swap the raspberry jam for any other fruit jam like strawberry, blueberry, or apricot.

Nuts: Add chopped nuts like walnuts or almonds for extra crunch.

Dark Chocolate: Use dark chocolate chips for a deeper chocolate flavor.

Gluten-Free: Use gluten-free all-purpose flour and certified gluten-free oats.
