Description

Cinnamon Coffee Crinkles are soft, chewy cookies bursting with cinnamon and brewed coffee flavor, perfect for coffee lovers and cookie enthusiasts alike.


Ingredients

1 1/2 cups all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1 cup brown sugar

1 large egg

2 tablespoons brewed coffee, cooled

1 teaspoon vanilla extract

1/4 cup granulated sugar, for rolling


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt. Set aside.
  3. In a separate large bowl, cream together the softened butter and brown sugar until light and fluffy, about 2-3 minutes.
  4. Beat in the egg, brewed coffee, and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing.
  6. Roll the dough into 1-inch balls, then roll them in the granulated sugar.
  7. Place the dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 8-10 minutes, or until the edges are set but the centers remain slightly soft.
  9. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For a decaf version, use decaffeinated coffee.

You can add chocolate chips for an extra indulgent treat.

For a spicier flavor, try adding a pinch of nutmeg or ginger.

Use a gluten-free flour blend if necessary.
