Ingredients
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1 cup brown sugar
1 large egg
2 tablespoons brewed coffee, cooled
1 teaspoon vanilla extract
1/4 cup granulated sugar, for rolling
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt. Set aside.
- In a separate large bowl, cream together the softened butter and brown sugar until light and fluffy, about 2-3 minutes.
- Beat in the egg, brewed coffee, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing.
- Roll the dough into 1-inch balls, then roll them in the granulated sugar.
- Place the dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 8-10 minutes, or until the edges are set but the centers remain slightly soft.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
For a decaf version, use decaffeinated coffee.
You can add chocolate chips for an extra indulgent treat.
For a spicier flavor, try adding a pinch of nutmeg or ginger.
Use a gluten-free flour blend if necessary.
