Description

A warm, comforting loaf that combines cinnamon and sugar, reminiscent of a cinnamon donut. Perfect for breakfast or as a sweet snack with coffee.


Ingredients

2 1/2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon cinnamon

1/2 teaspoon salt

1/2 cup granulated sugar

2 large eggs

1 cup milk

1/4 cup unsalted butter, melted

1 teaspoon vanilla extract

1/2 cup brown sugar

1 teaspoon ground cinnamon

2 tablespoons unsalted butter, melted (for topping)


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. In a large bowl, whisk together the flour, baking powder, cinnamon, salt, and granulated sugar.
  3. In a separate bowl, whisk the eggs, milk, melted butter, and vanilla extract until well combined.
  4. Gradually pour the wet ingredients into the dry ingredients, stirring just until combined. Be careful not to overmix.
  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  6. In a small bowl, mix together the brown sugar and cinnamon. Sprinkle evenly over the batter in the loaf pan.
  7. Drizzle the melted butter over the top of the loaf to help the sugar and cinnamon form a delicious, caramelized topping.
  8. Bake for 45-50 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
  9. Let the loaf cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.

Notes

For added crunch, consider adding chopped nuts such as pecans or walnuts to the batter.

For a deeper flavor, substitute melted butter with brown butter.

Try drizzling a simple powdered sugar glaze over the top for extra sweetness.
