Description
A warm, comforting loaf that combines cinnamon and sugar, reminiscent of a cinnamon donut. Perfect for breakfast or as a sweet snack with coffee.
Ingredients
2 1/2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup granulated sugar
2 large eggs
1 cup milk
1/4 cup unsalted butter, melted
1 teaspoon vanilla extract
1/2 cup brown sugar
1 teaspoon ground cinnamon
2 tablespoons unsalted butter, melted (for topping)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
- In a large bowl, whisk together the flour, baking powder, cinnamon, salt, and granulated sugar.
- In a separate bowl, whisk the eggs, milk, melted butter, and vanilla extract until well combined.
- Gradually pour the wet ingredients into the dry ingredients, stirring just until combined. Be careful not to overmix.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- In a small bowl, mix together the brown sugar and cinnamon. Sprinkle evenly over the batter in the loaf pan.
- Drizzle the melted butter over the top of the loaf to help the sugar and cinnamon form a delicious, caramelized topping.
- Bake for 45-50 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
- Let the loaf cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
Notes
For added crunch, consider adding chopped nuts such as pecans or walnuts to the batter.
For a deeper flavor, substitute melted butter with brown butter.
Try drizzling a simple powdered sugar glaze over the top for extra sweetness.
