These no-bake Cinnamon Roll Energy Bites are a wholesome, naturally sweet snack inspired by classic cinnamon rolls. Made with oats, almond butter, and maple syrup, they’re perfect for busy mornings or midday cravings, and they’re gluten-free, dairy-free, and vegan.
Ingredients
1 cup rolled oats
1/4 cup almond butter
1/4 cup maple syrup
1 teaspoon ground cinnamon
1/2 teaspoon pure vanilla extract
Pinch of sea salt
Optional: 1–2 tablespoons mini white chocolate chips or chopped pecans
Instructions
- In a medium mixing bowl, combine the rolled oats, ground cinnamon, and a pinch of sea salt.
- Stir in the almond butter, maple syrup, and vanilla extract until the mixture is well blended.
- Fold in mini white chocolate chips or chopped pecans if using.
- Roll the mixture into 1-inch balls using your hands.
- Place the bites on a parchment-lined plate or tray.
- Refrigerate for at least 30 minutes to firm up before serving.
Notes
Lightly wet or oil your hands to prevent the mixture from sticking while rolling.
Quick oats can be substituted for rolled oats for a softer texture.
Sunflower seed butter can be used for a nut-free version.
Dip bites in melted dairy-free white chocolate for a dessert-like treat.
