Description

Ingredients

For the Meatloaf:

1 ½ lbs ground beef (85% lean)

½ cup breadcrumbs

1 small onion, finely chopped

2 cloves garlic, minced

1 large egg

¼ cup milk

2 tablespoons Worcestershire sauce

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon dried oregano

½ teaspoon smoked paprika

For the Glaze:

½ cup ketchup

2 tablespoons brown sugar

1 tablespoon apple cider vinegar

1 teaspoon Dijon mustard


Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
  2. In a large mixing bowl, combine ground beef, breadcrumbs, onion, garlic, egg, milk, Worcestershire sauce, salt, black pepper, oregano, and smoked paprika. Mix until well incorporated.
  3. Shape the meat mixture into a loaf and place it on the prepared baking sheet or in a loaf pan.
  4. In a small bowl, whisk together ketchup, brown sugar, apple cider vinegar, and Dijon mustard to create the glaze.
  5. Spread half of the glaze over the top of the meatloaf.
  6. Bake for 45 minutes, then spread the remaining glaze over the top.
  7. Return to the oven and bake for an additional 15 minutes, or until the internal temperature reaches 160°F (71°C).
  8. Remove from the oven and let rest for 10 minutes before slicing.

Notes

For a juicier meatloaf, consider adding a splash more milk or using ground turkey with a bit of extra moisture.

This recipe can be easily doubled for larger groups or meal prepping.

For a low-carb option, substitute breadcrumbs with almond flour.
