Description
Classic Italian Iced Sprinkle Cookies are soft, buttery, cake-like cookies with a hint of almond flavor, topped with a sweet glaze and colorful sprinkles — perfect for holidays and celebrations.
Ingredients
1 cup unsalted butter, softened
¾ cup granulated sugar
3 large eggs
3 tablespoons whole milk
1 teaspoon almond extract
2¾ cups all-purpose flour
2½ teaspoons baking powder
½ teaspoon salt
2 cups powdered sugar, sifted
½ teaspoon almond extract (for glaze)
2–3 tablespoons whole milk (for glaze)
Rainbow nonpareil sprinkles (or seasonal-themed sprinkles)
Instructions
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream together the butter and sugar in a large bowl or stand mixer until light and fluffy, about 1–2 minutes.
- Add the eggs one at a time, mixing well after each addition. Stir in the milk and almond extract until fully combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture with the mixer on low speed until a thick dough forms.
- Using a tablespoon, scoop rounded portions of dough onto the prepared baking sheets, spacing them 2 inches apart.
- Bake for 10–12 minutes, or until the edges are lightly golden and cookies are set.
- Let cookies cool on the sheet for a few minutes before transferring to a wire rack to cool completely.
- Prepare the glaze by whisking together powdered sugar, almond extract, and 2–3 tablespoons of milk until smooth.
- Once cookies are completely cool, drizzle or spread glaze on top and quickly add sprinkles before the glaze sets.
Notes
Make sure cookies are completely cool before glazing to prevent the glaze from running.
For variation, substitute almond extract with vanilla or lemon extract.
Cookies can be stored in an airtight container at room temperature for up to 5 days.
Freeze unglazed or glazed cookies for up to 2 months; thaw at room temperature before serving.
To freeze dough, scoop into balls and freeze on a tray before transferring to a container.
