Description

These chewy, naturally sweet coconut bars are a delightful treat made with wholesome ingredients, perfect for satisfying your sweet cravings.


Ingredients

2 cups shredded unsweetened coconut

1/4 cup coconut oil, melted

1/4 cup pure maple syrup or agave

1/2 teaspoon pure vanilla extract

1/8 teaspoon salt

Optional: 1/2 cup mini chocolate chips or melted chocolate for topping


Instructions

  1. Line an 8x8 inch pan with parchment paper.
  2. In a medium mixing bowl, combine the shredded coconut, melted coconut oil, maple syrup, vanilla extract, and salt. Stir until the mixture is evenly combined and sticky.
  3. Press the coconut mixture firmly into the prepared pan using a spatula or your hands.
  4. If using chocolate chips, sprinkle them over the top and gently press them into the surface. Alternatively, drizzle melted chocolate over the top.
  5. Refrigerate for at least 1 hour, or until firm enough to slice into bars.

Notes

These coconut bars are naturally sweet, and you can adjust the sweetness level by using sweetened shredded coconut or adding extra maple syrup.

If you prefer a more indulgent treat, drizzle melted chocolate over the bars before refrigerating.

Store the bars in an airtight container in the fridge for up to a week, or freeze them for longer storage.

Feel free to add chopped nuts like almonds or cashews for an extra crunch.
