Ingredients
1 cup dried pineapple, chopped
1 cup unsweetened shredded coconut
1/4 cup coconut flour
1/4 cup honey or maple syrup
1/2 teaspoon vanilla extract
Pinch of sea salt
Instructions
- Place the dried pineapple into a food processor and pulse until finely chopped.
- Add the shredded coconut, coconut flour, honey (or maple syrup), vanilla extract, and a pinch of sea salt to the food processor. Process until well combined and sticky.
- Form the mixture into small bite-sized balls using your hands.
- Lay the balls out on a parchment-lined tray and refrigerate for at least 30 minutes to firm up.

Notes
These bites can be made with fresh pineapple, but dried pineapple provides a better texture and sweetness.
For a vegan version, substitute honey with maple syrup.
