Description

These Coconut Pineapple Bites are a tropical treat combining sweet pineapple and creamy coconut in a simple, no-bake snack. Quick to prepare, these bites are perfect for satisfying a sweet tooth while staying light and healthy.


Ingredients

1 cup dried pineapple, chopped

1 cup unsweetened shredded coconut

1/4 cup coconut flour

1/4 cup honey or maple syrup

1/2 teaspoon vanilla extract

Pinch of sea salt


Instructions

  1. Place the dried pineapple into a food processor and pulse until finely chopped.
  2. Add the shredded coconut, coconut flour, honey (or maple syrup), vanilla extract, and a pinch of sea salt to the food processor. Process until well combined and sticky.
  3. Form the mixture into small bite-sized balls using your hands.
  4. Lay the balls out on a parchment-lined tray and refrigerate for at least 30 minutes to firm up.
  5. Once chilled, enjoy your Coconut Pineapple Bites!

Notes

These bites can be made with fresh pineapple, but dried pineapple provides a better texture and sweetness.

For a vegan version, substitute honey with maple syrup.

These bites are naturally gluten-free thanks to the coconut flour and shredded coconut.

Other dried fruits like mango or papaya can be added for a different flavor.

You can freeze the bites for up to three months by freezing them on a tray first and then transferring to a zip-top bag or airtight container.
