Description

These coconut toffee chocolate chip cookie bars are a delightful treat that combines the rich flavors of toffee, coconut, and chocolate in every bite. With their chewy texture and sweet taste, they make the perfect indulgent dessert for any occasion.


Ingredients

1 cup butter, softened

1 cup brown sugar

1/2 cup white sugar

2 large eggs

1 teaspoon vanilla extract

2 1/2 cups all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon salt

1 1/2 cups chocolate chips

1 cup shredded coconut

1/2 cup toffee bits


Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9x13-inch baking pan with parchment paper.
  2. In a large bowl, cream together the softened butter, brown sugar, and white sugar until light and fluffy.
  3. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  6. Fold in the chocolate chips, shredded coconut, and toffee bits.
  7. Spread the dough evenly into the prepared baking pan, pressing it down slightly with a spatula.
  8. Bake for 20-25 minutes, or until golden brown on top and a toothpick inserted into the center comes out clean.
  9. Allow the bars to cool completely in the pan before cutting into squares.

Notes

Store in an airtight container at room temperature for up to 5 days.

Freeze for up to 2 months wrapped tightly in plastic wrap or foil.

For a chewier texture, slightly underbake the bars and let residual heat finish the cooking.
