Description

These Coffee Cookies are soft, chewy, and packed with the rich, comforting flavor of coffee. They make the perfect treat for any coffee lover and are ideal for pairing with your morning cup of joe or as an afternoon pick-me-up.


Ingredients

1 cup butter, softened

1 cup granulated sugar

1/2 cup brown sugar, packed

1 large egg

2 teaspoons vanilla extract

2 tablespoons instant coffee granules

2 1/2 cups all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup chocolate chips (optional)


Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy.
  3. Beat in the egg and vanilla extract until fully incorporated.
  4. In a small bowl, dissolve the instant coffee granules in 2 tablespoons of hot water, then add to the butter mixture and mix well.
  5. In a separate bowl, whisk together the flour, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. If using chocolate chips, fold them into the dough.
  8. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  9. Bake for 10-12 minutes, or until the edges are golden brown and the centers are set.
  10. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Chocolate chips are optional, but they add extra sweetness.

For a crunchier texture, chopped nuts like walnuts or pecans can be added.

Decaf instant coffee can be used for a milder coffee flavor.

Cinnamon or cocoa powder can be added to enhance the flavor.
