Description

Velvety and rich, this Creamed Corn recipe is a comforting side dish made with fresh or frozen corn, cream, butter, and simple seasonings. It's quick to prepare and pairs beautifully with a variety of main dishes.


Ingredients

4 cups fresh or frozen corn kernels

1/2 cup heavy cream

1/2 cup whole milk

2 tablespoons unsalted butter

1 tablespoon all-purpose flour (or gluten-free flour)

1/2 teaspoon salt

1/4 teaspoon black pepper

1 teaspoon sugar (optional)

1/4 teaspoon garlic powder

2 tablespoons grated Parmesan cheese (optional)

Chopped chives or parsley for garnish (optional)


Instructions

  1. Melt the butter in a large skillet over medium heat.
  2. Stir in the flour and whisk constantly for 1 to 2 minutes to form a smooth roux.
  3. Gradually add the milk and cream, whisking until the mixture thickens slightly.
  4. Stir in the corn, salt, pepper, garlic powder, and sugar if using.
  5. Reduce the heat to low and simmer gently for 10 to 12 minutes, stirring occasionally, until the corn is tender and the sauce is creamy.
  6. If using Parmesan, stir it in and let it melt into the sauce for another minute.
  7. Remove from heat and top with chopped chives or parsley before serving.

Notes

For a gluten-free version, use gluten-free flour or cornstarch for the roux.

Add shredded cheddar or a mix of cheeses for a cheesy variation.

Add cayenne pepper or hot sauce for a spicy kick.

Smoked paprika adds depth and a smoky flavor.

Stir in crispy bacon for extra savory richness.

Use plant-based milk and butter for a vegan version (omit Parmesan).
