Ingredients
2 cups cooked chicken, shredded or diced
2 cups cooked rice (white or brown)
2 cups broccoli florets (steamed or lightly blanched)
2 tablespoons butter
1 small onion, finely chopped
2 cloves garlic, minced
1/4 cup all-purpose flour
2 cups low-sodium chicken broth
1 cup milk (or unsweetened non-dairy milk)
1 teaspoon Dijon mustard (optional)
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups shredded cheddar cheese (divided)
1/4 cup grated Parmesan cheese (optional)
Instructions
- Preheat the oven to 375°F (190°C) and grease a 9x13-inch baking dish.
- In a large skillet, melt the butter over medium heat. Add chopped onion and garlic, and sauté for 3–4 minutes until soft.
- Stir in the flour and cook for 1 minute to form a roux.
- Gradually whisk in chicken broth and milk until the sauce is smooth.
- Add Dijon mustard (if using), salt, and pepper. Simmer for 3–5 minutes until the sauce thickens.
- Stir in 1 1/2 cups of shredded cheddar cheese and let it melt completely.
- In a large bowl, combine cooked chicken, rice, broccoli, and the cheese sauce. Mix well until evenly coated.
- Transfer the mixture into the prepared baking dish. Sprinkle the remaining 1/2 cup cheddar cheese and Parmesan on top.
- Bake for 20–25 minutes until the top is golden and the casserole is hot and bubbly.
- Let cool slightly before serving warm.
