Description

A creamy Parmesan chicken casserole featuring tender shredded chicken, Parmesan cheese, a rich cream sauce, and a crispy breadcrumb topping. Perfect for family dinners or meal prep.


Ingredients

4 boneless, skinless chicken breasts, cooked and shredded

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

1 tablespoon olive oil

1 onion, finely chopped

2 cloves garlic, minced

1 teaspoon dried Italian seasoning

1/2 teaspoon garlic powder

Salt and pepper to taste

2 cups cooked pasta (penne or rotini)

1/2 cup breadcrumbs (optional for topping)

1/4 cup chopped parsley (optional for garnish)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté for about 3-4 minutes until softened.
  3. Add the heavy cream, chicken broth, Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper to the skillet. Stir everything together and bring to a simmer.
  4. Once the sauce is simmering, stir in the shredded chicken and cooked pasta. Mix until the chicken and pasta are evenly coated with the creamy sauce.
  5. Transfer the mixture into a greased 9x13-inch baking dish. If desired, top with breadcrumbs for an added crunch.
  6. Bake for 20-25 minutes, or until the top is golden and bubbly.
  7. Garnish with chopped parsley before serving.

Notes

This dish can be made ahead of time and stored in the fridge for up to 24 hours before baking.

If you want to make it lower in fat, consider using a lighter version of heavy cream or half-and-half.

You can swap the pasta for zucchini noodles for a low-carb option.

For a gluten-free version, use gluten-free pasta and breadcrumbs.

For extra flavor, you can add vegetables like spinach, mushrooms, or bell peppers.
