Description
Golden and flaky on the inside with a crisp, flavorful coating, this air fryer cod fish is a healthy, quick alternative to deep-fried fish using simple pantry ingredients.
Ingredients
4 cod fillets (about 1.5 lbs total)
1/2 cup all-purpose flour
2 large eggs, beaten
1 cup panko breadcrumbs
1/2 tsp garlic powder
1/2 tsp paprika
1/2 tsp salt
1/4 tsp black pepper
Cooking spray or olive oil spray
Lemon wedges and fresh parsley for serving
Instructions
- Pat the cod fillets dry with paper towels and lightly season with salt and pepper.
- Set up three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs mixed with garlic powder, paprika, salt, and pepper.
- Dip each cod fillet in the flour, then the egg, and finally coat with the seasoned breadcrumbs, pressing gently to adhere.
- Spray both sides of the coated cod with cooking spray or olive oil spray.
- Preheat the air fryer to 400°F (200°C) for about 3 minutes.
- Place the cod fillets in a single layer in the air fryer basket.
- Cook for 10–12 minutes, flipping halfway through, until golden brown and the internal temperature reaches 145°F (63°C).
- Serve hot with lemon wedges and fresh parsley.
Notes
Substitute cod with haddock, tilapia, or pollock as needed.
Use gluten-free flour and breadcrumbs for a gluten-free version.
Add chili powder or Italian seasoning to change up the flavor.
Grated parmesan can be added to the breadcrumb mix for extra richness.
Reheat leftovers in the air fryer at 375°F for 3–5 minutes to maintain crispiness.
