Description

These crispy baked chicken tenders are a healthier alternative to fried chicken. Coated in panko breadcrumbs, Parmesan cheese, and flavorful spices, they come out perfectly crunchy without deep frying. Ingredients

1 lb chicken tenders

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

2 large eggs

1 tablespoon Dijon mustard

2 tablespoons olive oil

Instructions

  1. Preheat & Prep: Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Prepare Coatings:
    • In a shallow dish, combine panko, Parmesan, garlic powder, onion powder, paprika, salt, and black pepper.
    • In another dish, whisk together eggs and Dijon mustard.
  3. Coat the Chicken:
    • Dip each chicken tender into the egg mixture, then into the breadcrumb mixture, pressing gently to coat well.
  4. Bake:
    • Arrange chicken tenders on the baking sheet. Drizzle lightly with olive oil or spray with cooking spray.
    • Bake for 15-20 minutes, flipping halfway through, until golden and crispy.
  5. Serve: Enjoy warm with your favorite dipping sauce!

Spicy Version: Add cayenne pepper or hot sauce to the egg mixture.
