Ingredients
2 large sweet onions, thinly sliced into rings
1 cup grated Parmesan cheese
1 cup shredded cheddar cheese
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried oregano
1 tablespoon olive oil spray
Instructions
- Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- Peel the onions and slice them into thin, even rings. Separate the rings and set aside.
- In a mixing bowl, combine Parmesan cheese, cheddar cheese, garlic powder, smoked paprika, salt, black pepper, and dried oregano. Mix well.
- Place small piles (about 1 tablespoon each) of the cheese mixture onto the prepared baking sheet, leaving space between each. Flatten into circles roughly the size of the onion rings.
- Place one onion ring on top of each cheese circle and press down lightly to adhere.
- Lightly spray the tops with olive oil spray.
- Bake for 15–20 minutes, or until the cheese is melted, bubbly, and golden brown around the edges.
- Remove from the oven and let cool for 5–10 minutes to allow the chips to firm up and crisp.
- Carefully lift from the parchment paper and serve immediately.

Allow chips to cool fully before removing to help them firm up.
Store leftovers in an airtight container in the refrigerator for up to 3 days with a paper towel to absorb moisture.
Reheat in a 375°F (190°C) oven or air fryer for 5–7 minutes to restore crispiness.
For extra heat, add cayenne pepper or red pepper flakes to the cheese mixture.
