Description

Cheesy Taco Potatoes are a comforting and flavorful dish combining crispy roasted potatoes, seasoned taco meat, and melted cheddar cheese, topped with your favorite Tex-Mex garnishes. Perfect for dinner, game day, or feeding a crowd.


Ingredients

4 large russet potatoes, diced into bite-sized cubes

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

1 lb (450 g) ground beef or ground turkey

1 packet taco seasoning (or 2 tablespoons homemade taco seasoning)

1/4 cup water

2 cups shredded cheddar cheese

Optional toppings: sour cream, salsa, diced tomatoes, jalapeños, green onions, fresh cilantro


Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss the diced potatoes with olive oil, garlic powder, paprika, salt, and black pepper until evenly coated.
  3. Spread the potatoes on the prepared baking sheet and roast for 25–30 minutes, flipping halfway through, until golden and crispy.
  4. While the potatoes roast, cook the ground beef or turkey in a skillet over medium heat until browned. Drain excess fat.
  5. Add taco seasoning and water to the meat, stir well, and simmer until the mixture thickens slightly.
  6. Transfer roasted potatoes to an oven-safe dish. Top with the taco meat and sprinkle shredded cheddar cheese on top.
  7. Return the dish to the oven for 5–7 minutes, or until the cheese is melted and bubbly.
  8. Top with your favorite toppings and serve hot.

Notes

Use sweet potatoes for a sweeter twist.

Make it vegetarian by swapping meat with black beans or lentils.

Add jalapeños or hot sauce for extra heat.

Store leftovers in the fridge for up to 3 days.

Reheat in the oven or air fryer for best texture; microwave works in a pinch.
