Description

Golden, crispy chicken served over creamy fettuccine Alfredo creates the ultimate comfort food experience.


Ingredients

2 boneless, skinless chicken breasts

1/2 cup all-purpose flour

2 large eggs, beaten

1 cup Italian-style breadcrumbs

1/2 teaspoon garlic powder

1/2 teaspoon paprika

Salt and pepper, to taste

3 tablespoons olive oil (or enough for frying)

8 oz fettuccine pasta

2 tablespoons unsalted butter

2 cloves garlic, minced

1 cup heavy cream

3/4 cup grated Parmesan cheese

1/4 teaspoon ground nutmeg

Chopped parsley, for garnish


Instructions

  1. Pound the chicken breasts to an even thickness and season with salt, pepper, garlic powder, and paprika.
  2. Dredge each chicken breast in flour, dip in beaten eggs, and coat with breadcrumbs. Set aside.
  3. Heat olive oil in a large skillet over medium-high heat. Fry the chicken until golden brown and cooked through, about 4-5 minutes per side. Transfer to a paper towel-lined plate.
  4. While the chicken rests, cook the fettuccine pasta in a large pot of salted boiling water according to the package directions. Drain the pasta and set aside.
  5. Melt butter in a large skillet over medium heat, then add minced garlic and sauté for 1 minute.
  6. Stir in the heavy cream and bring to a simmer. Add Parmesan cheese and nutmeg, stirring until smooth and thickened, about 3-4 minutes.
  7. Toss the cooked fettuccine pasta in the Alfredo sauce, ensuring it's fully coated.
  8. Slice the crispy chicken and place it on top of the pasta. Garnish with chopped parsley and additional Parmesan cheese, if desired.

Notes

If you want to switch things up, try using shrimp or sautéed mushrooms for a vegetarian version.

You can reduce calories by swapping the heavy cream with a lighter version or using low-fat cheese.

For extra flavor, add a squeeze of lemon juice or red pepper flakes to the sauce.

Leftovers can be stored in an airtight container in the refrigerator for 2-3 days.
