Ingredients
2 large flour tortillas or wraps
½ cup (100 g) crumbled feta cheese
1 small cucumber, thinly sliced
¼ cup (60 g) Greek yogurt
1 tbsp fresh dill or mint, chopped
1 tbsp lemon juice
1 tsp olive oil
Salt and pepper to taste
Optional: baby spinach or arugula
Instructions
- In a small bowl, mix the Greek yogurt, lemon juice, olive oil, chopped herbs, salt, and pepper to make a quick herby spread.
- Spread a generous layer of this yogurt mixture over each tortilla.
- Layer cucumber slices, crumbled feta, and optional leafy greens over the bottom half of the wrap.
- Fold and roll the wrap tightly, making sure everything stays in place.
- Toast the wrap on a skillet over medium heat for about 2–3 minutes per side, until golden and crispy.
- Slice the wrap and serve immediately.
Notes
Wraps are best served fresh, but can be stored in the fridge for up to 1 day if needed.
Reheat by placing the wrap in a skillet over medium heat for 1-2 minutes per side.
For a gluten-free version, use gluten-free tortillas or wraps.
Substitute feta with goat cheese, ricotta, or shredded mozzarella for a twist.
