Description

These crispy garlic roasted potatoes are everything you want in a side dish: crispy on the outside, soft on the inside, and bursting with flavor.


Ingredients

2 pounds baby potatoes, halved or quartered

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried rosemary

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (optional, for garnish)


Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, toss the potatoes with olive oil, minced garlic, dried rosemary, dried thyme, salt, and pepper until the potatoes are evenly coated.
  3. Spread the potatoes in a single layer on a baking sheet, making sure they have enough space for the heat to circulate around them.
  4. Roast in the oven for 30-40 minutes, flipping the potatoes halfway through, until they are golden brown and crispy on the edges.
  5. Once done, remove the potatoes from the oven and garnish with freshly chopped parsley, if desired.
  6. Serve immediately and enjoy!

Notes

For a cheesy twist, sprinkle some grated Parmesan over the potatoes during the last 5 minutes of roasting.

Add a pinch of red pepper flakes or paprika to bring a little heat to the dish.

Feel free to experiment with other herbs like oregano or basil if you want a different flavor profile.

If you have leftovers, store them in an airtight container in the fridge for up to 3 days. Reheat in the oven at 375°F (190°C) for about 10 minutes or in a skillet over medium heat.
