Description
These crispy garlic roasted potatoes are everything you want in a side dish: crispy on the outside, soft on the inside, and bursting with flavor.
Ingredients
2 pounds baby potatoes, halved or quartered
3 tablespoons olive oil
4 cloves garlic, minced
1 teaspoon dried rosemary
1 teaspoon dried thyme
Salt and pepper to taste
Fresh parsley, chopped (optional, for garnish)
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, toss the potatoes with olive oil, minced garlic, dried rosemary, dried thyme, salt, and pepper until the potatoes are evenly coated.
- Spread the potatoes in a single layer on a baking sheet, making sure they have enough space for the heat to circulate around them.
- Roast in the oven for 30-40 minutes, flipping the potatoes halfway through, until they are golden brown and crispy on the edges.
- Once done, remove the potatoes from the oven and garnish with freshly chopped parsley, if desired.
- Serve immediately and enjoy!
Notes
For a cheesy twist, sprinkle some grated Parmesan over the potatoes during the last 5 minutes of roasting.
Add a pinch of red pepper flakes or paprika to bring a little heat to the dish.
Feel free to experiment with other herbs like oregano or basil if you want a different flavor profile.
If you have leftovers, store them in an airtight container in the fridge for up to 3 days. Reheat in the oven at 375°F (190°C) for about 10 minutes or in a skillet over medium heat.
