Description

A quick and flavorful skillet meal featuring crispy gnocchi, sautéed spinach, and crumbled feta. This vegetarian dish is ready in just 20 minutes and brings bold Mediterranean flavors to your table.


Ingredients

1 lb shelf-stable or refrigerated gnocchi

2 tablespoons olive oil

3 cloves garlic, minced

5 oz fresh spinach

1/2 teaspoon red pepper flakes (optional)

Salt and black pepper, to taste

1/2 cup crumbled feta cheese

Juice of 1/2 lemon


Instructions

  1. Heat olive oil in a large nonstick skillet over medium-high heat.
  2. Add the gnocchi in a single layer and cook undisturbed for 3–4 minutes until golden brown on the bottom.
  3. Stir the gnocchi and cook for another 3–4 minutes until all sides are crispy.
  4. Add the minced garlic and sauté for about 1 minute until fragrant.
  5. Stir in the spinach and optional red pepper flakes, and cook for 2–3 minutes until wilted.
  6. Season with salt and black pepper to taste.
  7. Remove from heat and stir in the lemon juice and crumbled feta.
  8. Serve warm as a main course or a hearty vegetarian side.

Notes

Use a hot skillet and don’t overcrowd to get extra crispy gnocchi.

Frozen spinach can be used—thaw and squeeze out excess moisture first.

Swap spinach with kale or Swiss chard for variety.

Add cherry tomatoes for a sweet contrast.

Make it vegan by using dairy-free feta or omitting it.

Leftovers store well for up to 3 days in the fridge.

Reheat in a skillet with a splash of water or broth to avoid drying out.
