Ingredients
2 large chicken breasts (about 500g total)
1/3 cup (110g) honey
1 1/2 tsp hot sauce (e.g., Frank’s or Cholula)
3/4 tsp chili flakes
2 tsp paprika
1 tsp salt
1/2 tsp each: onion powder, garlic powder, dried oregano, black pepper
1/4 tsp cayenne pepper
1/4 cup (35g) plain flour
2 eggs, beaten
1 cup (65g) Panko breadcrumbs
6-8 tbsp vegetable oil (for frying)
200g (7oz) feta cheese, crumbled
Instructions
1️⃣ Prepare Hot Honey:
- In a small bowl, mix honey, hot sauce, and chili flakes. Microwave for 20 seconds, stir, and set aside.
2️⃣ Season & Coat Chicken:
- In a bowl, mix paprika, salt, onion powder, garlic powder, oregano, black pepper, and cayenne.
- Set up 3 shallow dishes:
- One with flour + half of the seasoning mix.
- One with beaten eggs.
- One with Panko + remaining seasoning.
- Dredge chicken in flour, dip into eggs, then coat with seasoned Panko.
3️⃣ Cook Chicken:
- Heat oil in a skillet over medium-high heat. Fry each piece for 3-4 minutes per side until crispy and golden brown. Transfer to a wire rack to drain.
4️⃣ Broil with Feta:
- Sprinkle crumbled feta over the chicken and broil for 2-3 minutes until slightly golden.
