Ingredients
4 boneless, skinless chicken breasts
1 box (6 oz) stuffing mix (like Stove Top)
1 can (10.5 oz) cream of chicken soup
1 cup sour cream
1/2 cup chicken broth
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon black pepper
1 cup frozen mixed vegetables (optional)
Fresh parsley for garnish (optional)
Instructions
- Lightly grease the inside of your crockpot with nonstick spray.
- Place the chicken breasts in the bottom of the crockpot.
- In a medium bowl, whisk together the cream of chicken soup, sour cream, chicken broth, garlic powder, onion powder, and black pepper.
- Spread the stuffing mix evenly over the chicken breasts.
- Pour the soup mixture over the stuffing mix, gently spreading to cover everything.
- If using frozen vegetables, sprinkle them on top.
- Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until the chicken is cooked through and tender.
- Gently stir everything before serving, and garnish with fresh parsley if desired.
Notes
For juicier chicken, you can substitute chicken thighs for chicken breasts.
This recipe can be prepared the night before and cooked the next day.
The dish is still delicious without the mixed vegetables, but they add extra color and nutrition.
For optimal tenderness, cook on LOW for 6–7 hours rather than cooking on HIGH for the entire time.
Feel free to experiment with different stuffing mixes like cornbread or herbed varieties.
